"Elisa (Enzyme ImmunoAssay) and Lateral Flow (immunochromatographic) testing is performed on every lot number of incoming ingredients.  This is used to test for the absence of gluten down to 10 parts per million.

~Whole Grain Bread
 
This is a wholesome, whole grain bread that is hearty and yet has a delicious moist texture.  Made with exotic whole grains.
 
Ingredients:  Sweet Sorghum Flour, Corn Starch, Ivory Teff, Brown Rice Flour, White Sugar, Xanthan Gum, Yeast, and Salt.
 
This mix is 19 oz. and makes one large loaf of bread.  You will need to add 3 Eggs or Egg Replacer, 1 Tblsp. Vinegar, 1/4 cup Oil, and 1 2/3 cups Water.

~Sandwich Bread/Pillow Soft Rolls
 
This Perfect Sandwich Bread is the closest to the "real thing" bread that I've ever tasted.  This mix holds up beautifully in sandwiches and dinner rolls.
 
Ingredients:  Sweet Sorghum Flour, White Rice Flour, Corn Starch, Sugar, Xanthan Gum, Yeast, and Salt.
 
This mix is 20 oz. and makes one large loaf of bread or 24 rolls.  You will need to add 2 Eggs or Egg Replacer,

~Whole Grain All Purpose Flour

This healthy blend of grains can be replaced for white flour in any recipe.  Although it is gluten free, it is nutritionally as healthy as whole wheat flour.  It comes with 3 different recipes that are mouth watering delicious. These are: Pancakes/Waffles, Zucchini or Banana Bread, and Whole Grain Bread.  You will not be disappointed!

Ingredients:  Sweet Sorghum Flour, Brown Rice Flour, Teff Flour, and Cornstarch.

This mix is 4 lbs. and can be used for several different recipes.  If you do not have Xanthan Gum in your cupboards, you will need to have some on hand for this mix.  Different recipes call for different amounts of Xanthan Gum.

~Xanthan Gum

This is an essential ingredient to use in any gluten free recipe.  Xanthan Gum is the binding agent that holds together gluten free flours.  We provide instructions on what amounts to use in baking, cooking, and soups.  All of our mixes already include Xanathan Gum except for the Whole Grain All Purpose Flour and the Pastry All Purpose Flour.  The reason for this is different recipes call for different amounts of Xanthan Gum and therefore need to be measured accordingly.
